Cookies for Breakfast

Ingredients
  

  • ½ cup non-dairy butter
  • 1 cup peanut butter
  • 1 1/3 cup packed light brown sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1/3 cup water
  • 1 cup white flour
  • 1 cup wheat flour
  • 2 cup quick cook oats
  • ½ cup wheat germ I used honey
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1 cup golden raisins you can use either type, this is just my preference

Instructions
 

  • Beat together non-dairy butter, peanut butter, brown sugar, and vanilla until nice and creamy
  • Beat in eggs and water
  • Mix in flours, oats, wheat germ, cinnamon, and baking soda
  • Slowly stir in raisins
  • Use a baking scoop and drop 2 1/2" apart on greased cookie sheets
  • Flatten slightly (opps I didn't read this step - mine are very round!)
  • Bake at 350' for 18-20 minutes
  • Cool on racks
  • Store in an airtight container
