Cookies for breakfast you ask? YES!! Breakfast Cookie – I couldn’t even wait for these to cool. Good. Very good.

BREAKFAST COOKIE

½ cup non-dairy butter
1 cup peanut butter
1 1/3 cup packed light brown sugar
2 tsp vanilla
2 eggs
1/3 cup water
1 cup white flour
1 cup wheat flour
2 cup quick cook oats
½ cup wheat germ (I used honey)
1 tsp cinnamon
2 tsp baking soda
1 cup golden raisins (you can use either type, this is just my preference)

Beat together non-dairy butter, peanut butter, brown sugar, and vanilla until nice and creamy
Beat in eggs and water
Mix in flours, oats, wheat germ, cinnamon, and baking soda
Slowly stir in raisins
Use a baking scoop and drop 2 1/2″ apart on greased cookie sheets
Flatten slightly (opps I didn’t read this step – mine are very round!)
Bake at 350′ for 18-20 minutes
Cool on racks
Store in an airtight container

Instructions

  • Beat in eggs and water
  • Mix in flours, oats, wheat germ, cinnamon, and baking soda
  • Slowly stir in raisins
