Irish Coffee Cake

Ingredients
  

  • CAKE:
  • 110 g non-dairy margarine melted
  • 150 g light brown sugar
  • 2 large eggs
  • 210 g flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 3 Granny Smith apples – peeled cored and cut in a large dice
  • CRUMBLE:
  • 50 g each -
  • light brown sugar
  • plain flour
  • quick cook oats
  • non-dairy margarine cold

Instructions
 

  • Pre-heat oven to 350’F
  • Spray a 8x8 square pan with non-stick spray and set aside
  • Beat margarine & brown sugar together until pale
  • Add eggs and mix in until incorporated
  • In a separate bowl combine flour, baking powder, and cinnamon together
  • Slowly mix dry ingredients in with the wet
  • Stir in chopped apple
  • Batter will be thick and sticky
  • Spread batter into pan
  • Place crumble ingredients together in a small bowl
  • Mix together with fingers until it looks like pebbles
  • Sprinkle over top of cake
  • Bake for 40-45 minutes or until a wooden pick inserted into it comes out clean
  • Remove from pan and let cool for 10 minutes before you cut
