Gluten Free Dairy Free Corn Bread

Corn bread is a universally good recipe. This recipe for gluten free dairy free corn bread by sloCooking is a hit every time it is made. Cook it in an 8x8 or 9x9 pan, or even make muffins. Your family will thank you.
- 1 ½ cup DF plain milk (soy, flax, or other)
- 1 tbsp. coconut vinegar
- 2 large eggs
- ½ cup sugar
- 1 tbsp. honey
- 1 cup GF all purpose flour (with xanthan gum)
- 1 ½ GF corn meal
- 2 tsp. baking powder
- ½ tsp. baking soda
- 1 tsp. salt
- ½ cup canola oil
Pre-heat oven to 400’F
Grease cupcake pans
Mix coconut vinegar with DF milk – makes DF “buttermilk”
Beat egg, sugar and honey together
Combine GF flour, corn meal, baking powder, baking soda, and salt
Pour in wet ingredients and canola oil
Mix gently and pour into baking pans
Cook 20-25 minutes or until cooked through
Cool 10 minutes before serving
