Gluten Free Dairy Free Corn Bread

Your family will ask for this gluten free dairy free corn bread again and again after you make sloCooking’s recipe the first time. You can make this in an 8×8 or 9×9 pan, or if you’re feeding a crowd make this into muffins.  For an extra fun treat – add a little fresh or frozen corn to this recipe. GF DF Corn BreadsloCooking recipe for gluten free dairy free corn bread

1 ½ cup DF plain milk (soy, flax, or other)

1 tbsp. coconut vinegar

2 large eggs

½ cup sugar

1 tbsp. honey

1 cup GF all purpose flour (with xanthan gum)

1 ½ GF corn meal

2 tsp. baking powder

½ tsp. baking soda

1 tsp. salt

½ cup canola oil

  • Pre-heat oven to 400’F
  • Grease cupcake pans
  • Mix coconut vinegar with DF milk – makes DF “buttermilk”
  • Beat egg, sugar and honey together
  • Combine GF flour, corn meal, baking powder, baking soda, and salt
  • Pour in wet ingredients and canola oil
  • Mix gently and pour into baking pans
  • Cook 20-25 minutes or until cooked through
  • Cool 10 minutes before serving
