Chicken Tacos with Apple Slaw

Ingredients
  

  • 2 each avocados, halved and pitted
  • 2 tbsp. olive oil
  • 2 tsp. fresh lime juice
  • Kosher salt to taste
  • 1 each large Fuji apple, chopped
  • 1 each red bell pepper, chopped
  • 1 each stalk celery, chopped
  • 1 tbsp. apple cider vinegar
  • 1 tsp. chopped fresh mint
  • 1 tsp. ground cumin
  • 1 tsp. honey
  • 12 each small gluten-free tortillas, flour or white corn
  • 1 1/2 cup shredded leftover chicken, warmed up
  • 1/3 cup shredded dairy-free cheddar cheese
  • 1/3 cup dairy-free sour cream, thinned with a little water

Instructions
 

  • Make guacamole: Scoop out avocado into small bowl, mash with oil and lime juice, season with kosher salt
  • Make salsa: mix apple, bell pepper, celery,vinegar, mint, cumin and honey, season with kosher salt
  • Build tacos with warm chicken, guacamole, salsa and dairy-free cheese
  • Drizzle with dairy-free sour cream
