Chicken Tacos with Apple Slaw
We love tacos. We really love tacos. Who doesn’t? They’re easy to make, can be altered to fit any dietary restriction, and are perfect for a fast school night dinner. This recipe for chicken tacos with apple slaw is a wonderful fun recipe that everyone in your family will enjoy and ask for more.
Chicken Tacos with Apple Slaw
2 avocados, halved and pitted
2 tbsp. olive oil
2 tsp. fresh lime juice
Kosher salt to taste
1 large Fuji apple, chopped
1 red bell pepper, chopped
1 stalk celery, chopped
1 tbsp. apple cider vinegar
1 tsp. chopped fresh mint
1 tsp. ground cumin
1 tsp. honey
12 small gluten-free tortillas, flour or white corn
1 ½ cup shredded leftover chicken, warmed up
1/3 cup shredded dairy-free cheddar cheese
1/3 cup dairy-free sour cream, thinned with a little water
- Make guacamole: Scoop 18out avocado into small bowl, mash with oil and lime juice, season with kosher salt
- Make salsa: mix apple, bell pepper, celery, vinegar, mint, cumin and honey, season with kosher salt
- Build tacos with warm chicken, guacamole, salsa and dairy-free cheese
- Drizzle with dairy-free sour cream
