Black Bean Burger

Ingredients
  

  • 2 each 15 oz. cans black beans, drained and rinsed
  • 1 cup gluten free panko bread crumbs
  • 1/4 cup grated onion
  • 2 each garlic cloves, minced (I use a garlic press)
  • 2 each large eggs,beaten
  • 3/4 tsp. kosher salt
  • 1/2 tsp. paprika
  • 1/4 tsp. black pepper
  • Canola oil for cooking

Instructions
 

  • Mash beans in a mixing bowl until mostly broken up, some big pieces should still be seen
  • Stir in bread crumbs, onion, garlic, egg, salt,paprika, pepper
  • Mix to combine, set aside for 5-10 minutes
  • Heat oil in large non-stick pan
  • Form mixture into 4 patties
  • Cook 3-4 minutes/side, they should be browned on both sides and cooked through (165’F with thermometer)
