Black Bean Burgers

When the New Year arrives I really like to start the year off by cooking healthier recipes after a month or so of over indulging with savory and sweet treats. My family really enjoys this recipe for black bean burgers. They’re easy to make, and if you ever need to switch it up, you can change out the beans – I’ve made this before with kidney beans when I didn’t have black beans on hand. I hope you enjoy this recipe as much as my family.

Black Bean Burgers

2 each 15 oz. cans black beans, drained and rinsed

1 cup gluten free panko bread crumbs

¼ cup grated onion

2 garlic cloves, minced (I use a garlic press)

2 large eggs, beaten

¾ tsp. kosher salt

½ tsp. paprika

¼ tsp. black pepper

Canola oil for cooking

  • Mash beans in a mixing bowl until mostly broken up, some big pieces should still be seen
  • Stir in bread crumbs, onion, garlic, egg, salt, paprika, pepper
  • Mix to combine, set aside for 5-10 minutes
  • Heat oil in large non-stick pan
  • Form mixture into 4 patties
  • Cook 3-4 minutes/side, they should be browned on both sides and cooked through (165’F with thermometer)
