Roasted Pumpkin Seeds with Rosemary

February is starting off as the month of snacks since the Super Bowl is this weekend. So leading up to the big game I’ll be posting up some quick and easy recipes that you can make for your party or just to munch on as you watch the game with your family. I hope you enjoy this recipe for roasted rosemary pumpkin seeds. This snack is easy to make, great to taste, and friends and family alike will love you for making this any time of the year.

ROASTED ROSEMARY PUMPKIN SEEDS

2 tbsp. dried rosemary
2 cups fresh pumpkin seeds
2 tbsp. olive oil
2 tbsp. kosher salt, or to taste

  • Pre-heat oven to 350’F
  • Grind rosemary in a spice grinder
  • Combine ground rosemary with pumpkins seeds, olive oil and salt – mix well
  • Spread seeds on a rimmed baking sheet
  • Bake 10-12 minutes or until the seeds are crisp & brown
