Ever faced with that moment where you know you have to cook dinner, but just can’t seem to put it together fast enough? Me too – despite my best efforts and desires to plan ahead, sometimes I just don’t feel pulled together enough to get dinner on the table for my family.
That’s why I like recipes like this easy Mexican slow cooked chicken. Small effort for big reward – those are my favorite family dinners!
EASY MEXICAN CHICKEN
6 skinless, boneless chicken breasts
Olive oil
2 tsp cumin
1 tsp kosher Salt
1 tsp fresh black pepper
1 package taco seasoning
- Pre-heat oven to 350’F
- Place chicken breasts in greased baking dish
- Drizzle with olive oil
- Use pastry brush or your fingers to make sure chicken is completely covered with oil
- Mix cumin, salt & pepper together
- Sprinkle evenly over chicken breasts
- Massage spices into chicken
- Bake uncovered in oven for 30 minutes, or until meat thermometer reads 165’
- Remove chicken from oven & shred with forks
- Mix taco seasoning into shredded chicken, following package directions
- Serve with your favorite taco fixings
