Easy Holiday Cupcakes

Happy 4th of July. What says summer holiday better than these easy holiday cupcakes? As I’ve said before you don’t have to go overboard to have fun holiday food. These easy holiday cupcakes were my go-to for years when my daughter, now 11, was little.

Don’t be afraid of using a short cut way, and don’t be afraid to hit the “easy” button sometimes. It doesn’t make you any less of a good parent, and truthfully, your kids will enjoy it just as much when you do the easy way as when you spend hours on a recipe!

Just a few notes on icing cupcakes. I personally hate the plain circle tip (forgive my crassness, but it makes icing look like poop on a cupcake). When piping icing on cupcakes, I use a STAR TIP, it just looks sweeter. And don’t panic if you don’t have a piping bag, you can easily use a zip top bag, they’re strong enough to hold up to piping. To do this, snip a tiny bit off the bottom corner of a zip to bag. Push the icing tip into the cut, put it in enough to stay put – then fill the bag with icing. Twist the top closed and pipe icing on your cupcakes. Easy peasy.

1 box yellow cake mix – I look for ones that are “dairy free” to meet my dietary needs
1 package ready to make icing – once again, I look for “dairy free”
Red icing sugar
Blue icing sugar
Star icing tip
Cupcake liners

Bake cupcakes to package directions
Pipe icing on top
Sprinkle with icing sugar

  • Red icing sugar
  • Blue icing sugar
  • Star icing tip
  • Cupcake liners

Instructions
 

  • Bake cupcakes to package directions
  • Pipe icing on top
  • Sprinkle with icing sugar
