Peppermint Lemonade

Happy July! How is it possible that the summer is almost half way over? I just got an email from the kiddo’s school with the link to go and complete her registration paperwork for next school year. And while I’m at it, gulp – school starts back on August 21st! But despite this – there is still lots of summer left and plenty of time to make this delicious Peppermint Lemonade.

Peppermint Lemonade

1 cup fresh peppermint
4 lemons, juiced
1 lemon peel, thinly sliced
2 cups sugar
2 cups water
1 gallon water
Fresh mint & lemon twists for garnish

Make simple syrup
Combine 1 cup sugar & 2 cups water in a small sauce pan
Heat to boiling, stirring constantly until sugar is dissolved
Remove from heat, and add mint
Cool to room temperature

Pour lemon juice, simple syrup and lemon peel into a gallon jar
Screw on top & shake to blend
Unscrew lid, fill jar to top with water
Screw top back on and refrigerate overnight
Serve cold with a sprig of fresh mint and a lemon twist for garnish
