Family Friendly Hawaiian Fried Rice

You all know I enjoy cooking new things. This family friendly Hawaiian Fried Rice has me so very pleased. Now since my family is not from Hawaii, we don’t have the love of all things SPAM that the islanders do. I did adjust this recipe to cut down on the amount of salt my family would eat in one meal – low sodium SPAM and soy sauce for us. But those changes aside, my family really enjoyed this and I will keep it in regular rotation.

Family Friendly Hawaiian Fried Rice

INGREDIENTS FOR COOKED Rice

2 cups long grain rice
4 cups water
2 tbsp non-dairy butter

INGREDIENTS FOR Fried Rice

Cooked rice from above
½ lb. turkey bacon, cut into ½” pieces
Olive oil
1 x 12 ounce can, low sodium spam – cut into ¼” pieces
6 cloves garlic, minced
3 medium carrot, peeled and diced
4 large whole eggs, beaten
1 ½ cup frozen green peas
¼ cup low sodium soy sauce
4 green onions, diced – white & green parts

Procedures

To make rice
  1. add rice, water & non-dairy butter to a medium sauce pot
  2. Bring to a boil
  3. Reduce heat to low, cover and cook 20 minutes or until all the water is absorbed
To make fried rice
  1. fry turkey bacon in a large pan with a little olive oil until crispy
  2. Push crispy turkey bacon to the side of the pan
  3. Add spam and sauté until it starts to brown
  4. Remove bacon & spam from pan, set aside for later
  5. Add garlic, cook a few minutes on medium, do not brown
  6. Mix in diced carrot & peas, sauté until carrots are al dente
  7. Move vegetables to side, add in beaten eggs
  8. Stir egg around until it scrambles, sprinkle with pepper & salt to taste
  9. When egg is cooked, mix vegetables into egg
  10. Mix in bacon & spam, gently combine
  11. Add cooked rice, stir gently
  12. Pour in soy sauce and mix
  13. Top with green onion
  14. Serve warm
