G is for Granola – I’ve been trying out different granola recipes and have one that isn’t too bad. But as I’m always on the quest for the perfect granola recipe, kind of like my quest for the perfect purse, I know I’ll still keep trying out recipes every time I run across one.
GRANOLA
6 cups rolled oats
½ cup wheat germ
¼ cup honey – use something mild like clover, strong flavors like orange don’t work for this recipe
¼ cup vegetable oil
2 tsp vanilla
¼ tsp cinnamon
1/8 tsp nutmeg
¼ cup shredded coconut (optional)
2 cups gold raisins
Pre-heat oven to 350′
Grease 2-3 jelly roll pans (baking sheets w/ edges)
Mix oats, wheat germ and coconut in a large bowl
In a small saucepan, mix honey, oil, vanilla and spices
Cook until honey is clear and smooth
Add to oat mixture and blend well
Spread evenly onto baking sheets
Bake 15 minutes or until golden
Remove from oven and let cool
Once cool, mix in raisins & coconut
Store in an airtight container
