When you’re a working mom you look for ways to incorporate vegetables into a meal with little to no stress, especially if dealing with small children that might not otherwise want to eat the veggies. This recipe for tortellini with sweet potato hits the spot.
Not only is this an easy to make meal for busy nights, but it’s 100% kid approved. My daughter loved this dish when she was little and I made it often for her as a result.
This recipe works well with either fresh tortellini from the refrigerated section (did you know this kind freezes well, so buy up if you find it on sale) or with the dry variety found on the pasta isle.

Tortellini with Sweet Potato
1 lb. sweet potato, peeled & diced
dried thyme
olive oil
salt/pepper to taste
feta cheese
1 container tortellini – fresh, frozen or dried
Pre-heat oven to 400′
Toss sweet potato with olive oil, thyme, salt & pepper
Roast sweet potato at 400′ for 25-30 minutes or until tender
While sweet potato is cooking, cook tortellini according to package directions
Drain cooked tortellini, return to pot
Mix tortellini with cooked sweet potato, ½ cup feta cheese, and 1/3 cup pasta water
Eat & Enjoy!
