Breakfast Sandwich #2

I’m back at it again with breakfast sandwich #2. Another incarnation of my favorite breakfast item.

I adore this sandwich, though this one is just for me – the kiddo does not like this version at all. Today’s consists of your favorite toasted bread, vegan cream cheese, and thinly shaved red onion. I know you want to know how to get onion shaved so darn thin. Well you could either slice it by hand with an extremely sharp chef knife, or go the easy route and use a mandolin.

Back when the hubs and I were first married and living in San Francisco, we would go into Japan town to purchase these at a Japanese kitchen shop. The Benriner was dirt cheap and difficult to find, but so worth the trek across town. Don’t be fooled by the bright colors – this is a professional chef tool, wicked sharp, and not something to use casually. But that said – once you start using one of these, you’ll wonder why you never purchased it sooner.

2 slices toasted bread (I am loving Udi’s gluten free rye these days)
Vegan cream cheese
Paper thin shavings of red onion, must be red – they’re sweeter than white or yellow
Sliced tomato
Salt & pepper to taste

Ingredients
  

  • 2 slices toasted bread I am loving Udi’s gluten free rye these days
  • Vegan cream cheese
  • Paper thin shavings of red onion must be red – they’re sweeter than white or yellow
  • Sliced tomato
  • Salt & pepper to taste

 

I’m not quite sure when I made the discovery that thin shaved red onion tasted amazing with cream cheese. I’ve never been a lover of onion on bagels. But this combination starts my day off in a great way. I hope you enjoy it. Happy eating!
