This was my very own creating and it turned out so well, that the family asked me to keep it around. Bonus, this was a crazy easy recipe to make. When I first made it I was not eating gluten free, but have since given it a tweak to match my gluten-free cooking needs. When weather is warmer, this is a great salad to make. My gluten free orzo and chicken salad can be made for potlucks and family dinners. It is something that you can make in advance and serve when the weather is too hot outside to cook. Gluten Free Orzo and Chicken Salad
1 package gluten-free orzo, cooked per package directions
Left over chicken, cut into 1” cubes
1 Persian cucumber, sliced
Sun-dried tomato (drain off oil)
Sliced red onion, to taste
Flat leaf parsley, chopped
Italian salad dressing, to taste
- Cook orzo following package directions
- When pasta is cooked, rinse in cool water, drain and place in a large bowl
- Add chicken, Persian cucumber, sun-dried tomato, red onion, parsley and dressing
- Stir to combine
- Cover and let chill until you are ready to eat
