Simple Pumpkin Muffins
I discovered this recipe a long time ago. I like to make these simple pumpkin muffins in the fall, but these are a year round recipe. While this recipe calls for using a box mix, you can certainly take your favorite homemade cake recipe to make these simple pumpkin muffins. My family enjoys these and I enjoy that they’re fast and quick to make.
Simple Pumpkin Muffins
1 package gluten-free dairy-free cake mix (white, yellow or spice)
1 x 15 ounce can pumpkin puree
1 cup gold raisins
- Pre-heat oven to 400’F
- Line muffin tin with cupcake liners
- Stir cake mix per package directions
- Add in raisins, stir to combine
- Spoon into muffin liners, fill about ¾ full
- Bake 20 minutes or until a toothpick inserted into the center comes out clean
- Remove from oven
- Remove muffins from tins and cool on wire racks
