Garlic White Beans

You know I like eating beans and we as a household like to pair cooked beans with meat, poultry and other proteins. These garlic white beans pair well with steak. I like to pair them with carne asada.

Garlic White Beans

2 lbs. carne asada
30 ounces white beans, drained and rinsed
4 Roma tomatoes, chopped
¾ red onion, chopped
1 tsp. fresh garlic, crushed (I use a garlic press)
3 tsp. Italian seasoning
1 cup chicken stock
3 cups loose packed, chopped spinach
Olive oil
Kosher salt & black pepper to taste

  • Heat oil in a large non-stick skillet over medium heat until hot.
  • Cook carne asada until browned evenly, pour off drippings
  • Add onion, tomato, salt and pepper
  • Bring to a boil
  • Reduce heat, over tightly and simmer 20 minutes or until steak is fork-tender
  • Remove steaks and keep warm
  • Stir beans into cooking liquid, bring to a boil
  • Reduce heat and cook 7-10 minutes or until sauce is thickened, stir frequently
  • Mix in spinach, remove from heat
  • Let stand 1 minute
  • Serve bean mixture with cooked carne asada
