Comfort Food is Turkey Bean Hotdish

Growing up my mom used to make the best comfort food. Now for me as an adult comfort food is turkey bean hotdish. This is a one pot meal if you choose, quick to put together and great to make in bulk for freezing for another meal.

Normally this is made with ground turkey, but I did attempt a trial with left over slow cooked chicken. Not bad, but not the same. Moral of the story – experimenting in the kitchen is good but for this one stick with the recipe!

Turkey Bean Hotdish

½ cup red onion, diced
½ pound ground turkey
¼ cup brown sugar, packed
½ cup ketchup
2 tbsp. vinegar
1 tbsp. prepared mustard
1 can each (16 ounces/each) – kidney beans, butter beans, small white beans, black beans

Pre-heat oven to 300’ F
In a Dutch oven over medium-high heat brown onion and ground turkey with a little olive oil
Drain & rinse beans
Mix brown sugar, ketchup, vinegar and mustard together
Add beans and liquids to the ground turkey
Remove from heat and cover
Place in oven – bake for 1 ½ hours

Yield – 6 servings (1 ½ cups each)
