Watermelon Jicama Salad
I’ve always enjoyed cool refreshing salads during warmer weather months. This watermelon jicama salad is no exception. You can serve this on its own with your favorite chips, or dress it up and serve it over your favorite grilled fish.

Watermelon Jicama Salad
2 ½ cups seedless watermelon, diced
1 ½ cups jicama, peeled and diced
3 tbsp. each (chopped): red onion, fresh mint, pasilla chili
1 ½ tsp. fresh lime juice
Kosher salt to taste
- Gently toss all ingredients together
- Serve immediately with your favorite chips, or over grilled fish
