Healthy BBQ Chickpeas
Anyone that has been following me knows I go back and forth with moments of eating super healthy and moments where I struggle to eat healthy options. This recipe for healthy BBQ chickpeas was created during one of my healthy binges and I absolutely adore it.
This is one of the things I like to use with my Instant Pot. I cook up a whole bag of dried beans, in a very short amount of time, and keep those beans frozen in my freezer for times when I don’t have time to get canned beans at the store. And we all know, making beans from dry is way cheaper than buying canned beans, especially with food still having inflated prices at the market.
I hope you enjoy this recipe for healthy BBQ chickpeas. There are multiple options – serve it over toast, serve it in a bowl over rice. You can even serve this over greens for a salad.
Healthy BBQ Chickpeas
1 onion thin sliced & sautéed
1 garlic clove, minced
1 zucchini diced
2 (15 oz) cans chickpeas, drained & rinsed
1/3 cup bbq sauce
- Saute onion and garlic until soft
- Add zucchini & cook until tender
- Add chickpeas and BBQ sauce
- Heat through
- Serve on GF toast with dairy free butter
- Delish!
