Quick Pasta Salad

I came up with this quick pasta salad when we were living in San Francisco. This is crazy easy, and when I say easy I mean EASY! Feel free to adjust the vegetables you use. I’m partial to the ones listed, but cook to your taste. Remember there is no right or wrong when it comes to cooking.

QUICK PASTA SALAD

One package elbow noodles
2 carrots – sliced in rounds
3 sticks celery – chopped
1 red bell pepper, chopped
1/2-1 red onion, chopped
1 can sliced black olives
2 hand fulls fresh sugar snap peas – ends snapped off & string removed
Poppy Seed dressing – I like Briana’s if you can find it, or Annie’s

Cook pasta
Once pasta is al-dente, run under cold water to stop the cooking
Cool the noodles completely down
Place into a large mixing bowl
Add in vegetables
Pour over dressing – if you are watching your calories, you can thin the dressing with some rice wine vinegar
