When we had our café I purchased a book 1 Mix 100 Muffins – you know the series. They have 1 Mix books for everything – pizzas, muffins, cupcakes, etc. Well I decided to play around with one from that book and came up with these Pineapple-Coconut Muffins.
These muffins are yummy and so easy to make. My kid loves them and asks for them regularly. Which I’m happy to do, however now that I’ve tested out so many recipes that are keepers it’s really hard to keep them all in regular rotation. Especially since nothing makes me happier than trying out new recipes.

PINEAPPLE-COCONUT MUFFINS
1/3 cup canola oil
1 tsp vanilla
1/2 cup sugar
1 cup coconut milk
1 egg
½ cup shredded coconut
1 cup chopped pineapple
1 cup + 2 tbsp flour
1/2 tsp baking soda
1/2 tsp baking powder
Pre-heat oven to 350′
Mix oil, sugar, vanilla, coconut milk, egg, pineapple & coconut
Mix well
Add in dry ingredients – flour, baking soda, and baking powder
Mix to combine
Fill muffin liners 3/4 fill with batter
Bake 20-30 minutes until cooked, and toothpick comes out clean
