Family Approved Beef with Broccoli

I’m slowly making my way through the stacks of recipes that need to be tried. Here is my take on a family approved beef with broccoli.  This is kid and adult approved, and if you’re feeling productive, double it so you can freeze half for later.

BEEF with BROCCOLI

BEEF MARINADE
3 tsp low sodium soy sauce
2 tsp cornstarch

STIR-FRY
1 lb beef – top sirloin or flank steak, thinly sliced
2 tsp water
3 tbsp oyster sauce
1 1/2 lbs broccoli, cut into bite sized pieces
1 tbsp oil
2 tsp balsamic vinegar
1 tbsp minced garlic

  1. Cut beef and marinade for 20 minutes at room temperature or longer in the fridge
  2. Mix up stir fry sauce (oyster sauce, water, balsamic vinegar) set aside
  3. Steam broccoli and set aside
  4. Heat oil in large sauté pan on high heat
  5. Sauté garlic until tender
  6. Add beef and fry until beef is cooked on both sides
  7. Add stir fry sauce and broccoli and stir until all is combined
  8. Serve over warm white rice or for a healthier option – cauliflower rice
