French onion soup is yummy in my tummy. I’ve had to learn to make this dairy free, but add enough white wine and it’s all good!
My favorite part of this recipe and why I’m more than pretty pleased with the outcome is I didn’t use a recipe! Score Heather!
Heather’s French Onion Soup
4 cups thinly sliced yellow onion
olive oil
2 cups white wine
4 cups chicken stock
1/2 tsp thyme leaves
salt & pepper
Crunchy bread
Dairy free Parmesan cheese
Sauté onions in stock pot with olive oil
Once onions have begun to wilt add in chicken stock and white wine
Sprinkle in thyme leaves
Season with salt & pepper
Bring to a boil at high heat
Lower heat to medium-low and simmer 20 minutes
Ladle into bowls
Top with a piece of crunchy bread
Melt dairy-free cheese on top
Enjoy
