Heather’s Easy Marinated Mushrooms

When I was pregnant I came up with a recipe for easy marinated mushrooms that was amazing. Then poop – I lost the recipe and had to come up with it again. Yippee for you – I have re-created it and they’re still as amazing as ever.

Note – you’ll want to save this recipe as it’s another one that will fit my “travel well” theme for the upcoming holidays. Heck, this is easy and tasty enough to make next time you tailgate or have a football party!

Easy Marinated Mushrooms

Easy Marinated Mushrooms

4 packages button mushrooms – scrubbed & sliced in 1/2 or 1/4 depending on their size
2 tsp soy sauce
pinch kosher salt
½ cup rice wine vinegar
1 1/2 tsp dried basil
1 1/2 tsp dried thyme
1 1/2 tsp dried oregano
5 tbsp garlic oil
1 1/2 tsp sugar

Bring salt, soy sauce, vinegar, garlic, seasonings & oil to a boil
Simmer briefly
Add sugar
Make sure it dissolves
Add in sliced mushrooms
Stir slowly for 2-3 minutes or until all mushrooms are completely covered
Turn off heat
Let mushrooms sit until cooled
Refrigerate until ready to serve
