Taco Soup

It feels like I am doing NO preparation in advance for dinner lately. Case in point, this recipe for taco soup. It was a last minute desire for soup, I happened to have most of the ingredients on hand, however I did not have a recipe for taco soup using ground turkey.

So onto the computer I go, and hunted one down. Put a few of my own tweaks on it and it turned out GREAT! This is great for a rainy day. I hope all the fall weather we’ve been having holds out. I want cold and rain.

TACO SOUP

1 1/2 lbs. ground turkey
2 small red onions, diced
1 (15 oz) can tomato sauce
2 cans (15 oz size) water
1 (15.5 oz) can black beans
2 (14.5 oz) cans diced tomato
1 (15.5 oz) can kidney beans
2 cup frozen corn
½ cup sliced black olives
1 (1.25 oz) packet taco seasoning
1 (1 oz) packet dry ranch salad dressing
Garnish: corn chips, grated dairy free cheese, dairy free sour cream

In a large stock pot brown ground turkey and onion
Add tomato sauce, water, diced tomato and stir
Open beans, drain and rinse in water
Add to pot
Add corn, olives, taco seasoning, ranch mix and stir
Bring to a boil, then lower to a simmer
Cook for 1 hour
Serve hot with your favorite garnishes
