Peparkaker Cookies: VIRTUAL COOKIE SWAP

This is a recipe for Peparkaker Cookies (from my cousin Win). He believes it came from our Nana (out fathers’ mother) – and I wouldn’t be surprised. She had a habit of making certain recipes for different family groups. I have no memories of her making this for my family, but probably because we were too busy making the Warm Molasses cookies with my mom’s recipe!

I am thrilled that so many people shared recipes with me over the years. Makes me totally how much larger the Virtual Cookie Swap will grow (hint hint my friend, time to share a recipe or two!). I did give this recipe a dairy free twist in that I swapped out the unsalted butter & 1 tsp. salt for dairy free margarine.

PEPARKAKER COOKIES

2/3 cups dairy free margarine
2 cups flour
1 tsp. baking soda
1 tsp. ginger
1/3 cup molasses
1 tsp. cinnamon
1 tsp. cloves

Cream together dairy free margarine & sugar
Add eggs, then molasses, beating well after each addition, until light and fluffy
Sift all dry ingredients together and add to first mixture, beating well
Store the stiff dough with refrigerator for several hours
Roll out 1/2 the dough at a time
Roll thin, you want it to be 1/8″ thick – the thinner the dough the crisper the cooking
Bake on un-greased baking sheet at 350’ for 5-8 minutes

Glaze (optional):
1 ½ cups confectioner sugar
2-3 tbsp. dairy free milk
1 tsp. vanilla
