Chicken & Leek Soup

Life has been all about change this past year, which is how I came across this recipe for chicken & leek soup with spinach. The older I am getting the healthier I find myself eating and this recipe is no exception.

This last year both the hubs and I have been trying to make a concentrated effort to eat cleaner. Not only is this a bonus for us, but it’s a teaching moment for my daughter. I like that my life changes are not only good for me but help her learn good habits for when she becomes an adult.

Chicken & Leek Soup

3 lbs. boneless chicken, cut in chunks
1 leek, washed, dried and diced
4 stalks celery, chopped
1 cup spinach, rough chopped
4 cloves garlic, crushed with a garlic press
1 tsp. ground black pepper
1 tsp. kosher salt
2 tsp. dried thyme
1 tsp. ground cumin
2 tbsp. olive oil
5 cups low sodium chicken stock
1 cup water

  • Sauté leek and celery in olive oil until both begin to soften
  • Add chicken, brown most of the way
  • Add garlic when chicken is almost browned
  • Mix in salt, pepper, and cumin
  • Add stock and water
  • Cook 30 minutes
  • Add in thyme
  • Cook 10 minutes more
  • Serve hot
