We are obsessed with making chili. We have made many types over the years, including this recipe for California Wine Country Chili that we made for a winery chili cook off many years ago.
This makes a large quantity of chili and is perfect for batch cooking. Make sure you have lots of containers on hand so you can freeze for later use. I love to serve chili with fresh cornbread.
California Wine Country Chili
Ingredients:
6 slices bacon
10 ounces ground beef
10 ounces hot Italian sausage, cut into 1-inch chunks
2 ½ cup red wine
1 small red onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced (I use a garlic press)
1 tsp. dry hot mustard
1 tsp. paprika
1 tsp. kosher salt
15 ounce can kidney beans, drained and rinsed
15 ounce can pinto beans, drained and rinsed
½ cup Worcestershire sauce
1 tsp. cumin seeds
1 ½ tsp. black pepper
6 cups Roma tomato, chopped
Procedures:
- Brown bacon
- Drain, crumble and set aside
- Pour off bacon fat, brown ground beef, drain and set aside
- Pour off fat, cook onion, pepper, garlic over low heat 2-3 minutes
- Stir in wine and Worcestershire sauce, simmer uncovered 10 minutes
- Stir in mustard, cumin seed, paprika, salt and pepper, simmer 10 minutes
- Mash tomato
- Add mashed tomato and meats to onion mixture
- Heat to boiling
- Reduce heat, simmer covered 1 ½ hours, stir occasionally
- Best if made in advance (at least 1 day) and reheat when you want to eat it
