Slow Cooker Jerk Chicken
While on my island theme junket I decided to head over to the Atlantic with this slow cooker jerk chicken. School time is all about using my slow cooker and this was an easy and tasty recipe. When it is done cooking serve this dish with a healthy green salad to balance out the sweetness of the jerk style cooking.
Slow Cooker Jerk Chicken
1 bunch green onion, chopped
¾ tsp. dried thyme
3 garlic cloves
1 tsp. paprika
1 tsp. ground allspice
1 tsp. ground dried mustard
¼ tsp. cinnamon
½ tsp. kosher salt
1 tbsp. fresh lemon juice
1 tbsp. honey
2 lbs. chicken legs, skin off
1 tsp. olive oil for greasing slow cooker
- To make jerk seasoning, add all ingredients (except chicken and oil) to food processor and pulse until mixed
- Grease slow cooker with oil and place chicken inside
- Top chicken with jerk mixture
- Cook on low for 2 hours, baste chicken with juices
- Turn chicken over, cook or 2 more hours on low
- Before serving, broil chicken in oven to crisp up and pour remaining juices on top, about 5 minutes
