Island Style Pork Chops

Still visiting the islands with this recipe for island style pork chops. I served this with the recipe for Caribbean rice. Your family will enjoy the wonderful flavors of these two dishes. If you have time, you can make your own homemade mango salsa, but as I am a busy working mom, I like to take kitchen shortcuts when I can. For this recipe that meant buying a jar of ready made mango salsa.

Island Style Pork Chops

Pork:

1 jar mild mango salsa
1 cup chopped fresh cherry tomato
4 bone in pork chops

Rub:

1 tbsp. dried thyme
1 tsp. ground allspice
½ tsp. ground coriander
½ tsp. kosher salt
1/8 tsp. paprika
Pinch nutmeg
Pinch ground cloves

  • Combine rub ingredients
  • Rub into pork chops and set aside
  • Heat grill to medium-high
  • Cook pork chops 3-4 minutes per side or until cooked through
  • Serve warm with mango salsa

  • 1 tbsp. dried thyme
  • 1 tsp. ground allspice

  • ⅛ tsp. paprika
  • Pinch nutmeg
  • Pinch ground clove
Instructions
  1. Combine rub ingredients
  2. Rub into pork chops and set aside
  3. Heat grill to medium-high
  4. Cook pork chops 3-4 minutes per side or until cooked through
  5. Serve warm with mango salsa
