Trying out new recipes makes me happy. This recipe makes me think back to when the kiddo was little. I think there is a direct correlation to my lack of cooking/blogging then and the lack of free time I had when my mother’s helper was unable to come in two days a week. Well that, and back then our catering company took off like a jet. This recipe for sweet spicy Asian pork will totally make it into my regular rotation.
Sweet Spicy Asian Pork
½ cup brown sugar, packed
½ cup tamari
2 tsp. powdered garlic
1 tbsp. paprika
2 tsp. powdered ginger
2 ½ lbs. pork shoulder, trimmed of fat and cut into 2” pieces
Kosher salt and black pepper to taste
1 cup basmati rice
1 medium bok choy, sliced thin (about 8 cups)
Sliced green onion, for garnish
- Place pork in a slow cooker
- Stir together: brown sugar, tamari, powdered garlic, paprika, powdered ginger – mix to combine
- Pour over pork and make sure it is completely covered
- Cook 4-5 hours on high or 7-8 hours on low, following your cooker’s instructions
- 25 minutes before pork is done cooking, prepare rice
- 5 minutes before serving, mix bok choy into meat, stir and cook until heated through
- Serve over rice
