There are times, as much as I hate to admit it, that I completely fail at planning a menu in advance. I am all about quick meals these days. Between my job, being a mom, and running a household I do not have the time I used to have to spend in the kitchen on a school night. This is a quick dinner you can put together in a flash, especially if you have the ingredients on hand as I usually do.
Quick Pantry Dinner
One package of your favorite chicken sausage, I always have a package or two in my freezer for nights like this
One package gluten-free rice pilaf
¼ cup chopped white onion
½ cup chopped button mushroom
- Cook pilaf according to package directions
- Cook sausage until browned on all sides
- Set aside sausage and let cool for a minute
- Quickly saute mushrooms and onion, when cooked mix in to cooked pilaf
- Plate up pilaf and top with slices of sausage
