This recipe for apple cranberry bars turned out so good, I had to eat some before writing this down. These are moist, delicious and oh so yummy. I cannot believe this recipe originated from a diabetic cookbook. Remember how I wrote about picking apples at a you-pick farm? This recipe is another way to utilize the apples I picked that day with my family.
Apple Cranberry Bars
6 tbsp. dairy-free margarine, softened
¾ cup packed light brown sugar
2 eggs
2 tbsp. honey
1 tsp. vanilla
1 cup gluten-free measure-for-measure flour
2/3 cup quick cook oats
¾ tsp. baking powder
½ tsp. baking soda
¾ tsp. allspice
1 cup finely chopped peeled apple
½ cup dried cranberries, chopped
- Pre-heat oven to 350’F
- Spray a 9” square pan with non-stick spray
- Beat dairy-free margarine and sugar until blended well
- Beat in eggs, honey, and vanilla
- Mix in gluten-free flour, baking powder, baking soda, and allspice
- After mixing fully, gently stir in apples and cranberries
- Pour batter into prepared pan
- Bake 35-40 minutes until a wooden pick inserted into the center comes out clean
- Remove from oven, cool on wire rack
- When cool, slice
- Sprinkle with powdered sugar before serving (optional)
