Easy Chicken Tacos with Chili and Lime
I go through phases where I use my Instant Pot. I came up with this one during one of those phases. This is great year round, and super easy once school starts back up for a quick week night family dinner.
Easy Chicken Tacos with Chili and Lime
2 tbsp. olive oil
2 pounds frozen chicken breast pieces
1 – 7 ounce can salsa verde
1 cup chicken stock
2 tsp. paprika
1 tsp. ground cumin
1 tsp. ground onion
1 tsp. kosher salt
Zest 2 limes
Juice 2 limes
4 cloves garlic, minced (I use a garlic press)
Corn tortillas & other taco toppings
- Place olive oil, frozen chicken, salsa verde, chicken stock, paprika, cumin, ground onion, salt and lime zest into instant pot
- Close lid and close valve to sealing
- Set pressure to high
- Manually set time to 25 minutes
- When cooking is done, quick release vent pressure
- Open lid, shred chicken
- Stir in lime juice and minced garlic
- Serve on corn tortillas with your favorite toppings
