No Cook Dairy Free Chia Pudding

Here is another dessert recipe I came across that was given an allergy safe tweak to match my food restrictions. This can be a challenge, but I am always up for doing something different. This no cook dairy free chia pudding has turned into one of my favorite recipes. I will make this and portion it up in ½ cup twist top plastic containers. That way they will stay fresh in the fridge and I can eat them at my leisure. I have been known to eat this for breakfast.

No Cook Dairy Free Chia Pudding

3 cups plain unsweetened dairy-free milk, I like to use flax milk
2/3 cup chia seeds
2 tsp. vanilla extract
1 tsp. ground cinnamon
3 tbsp. agave syrup

  • Whisk all ingredients together
  • Transfer to small containers, I typically use ½ cup twist top plastic containers
  • Twist on lids
  • Chill in refrigerator for at least 1 hour before serving
  • Top with fresh fruit if desired
  • Makes 4 servings
