Easiest Casserole Ever

I keep finding myself going back to things my mother cooked when I was growing up. This casserole is one of those dishes. My mom used to make this casserole for church or scout potlucks. It was a crowd pleaser and one that I enjoy making to this day. However these days I have replaced the ground beef with ground turkey. I have also switched out the cheese for dairy-free cheese. This is the easiest casserole ever and I just love it to pieces.

Easiest Casserole Ever

10 small potatoes
1 lb. ground turkey
1 small yellow onion, diced
8 ounces dairy-free shredded cheese
Seasoning salt
Dairy-free margarine
Kosher salt
Ground black pepper

  • Pre-heat oven to 350’F
  • In a large pan, brown ground turkey, sprinkle meat with seasoning salt while cooking
  • When meat is almost done cooking, add diced onion
  • Cook on medium-low until onion is tender
  • Slice the ends off the potatoes
  • Cut potatoes into thin slices the long way
  • Spray a casserole dish with non-stick spray
  • Cover the bottom of the dish with one layer of potatoes
  • Divide the meat and onion mixture in half
  • Spread half the mixture on top of the potatoes
  • Layer half the dairy-free cheese on top
  • Repeat all three layers and end with a layer of potatoes
  • Put dots of dairy-free margarine on top of the final layer of potatoes
  • Sprinkle with salt and pepper
  • Bake 45-60 minutes or until warm and bubbly
