Best Ever Chicken Salad with Grapes

Do I have a recipe for you. The best chicken salad you have ever tasted. How many of you find yourself with left over chicken and ponder what creative dish you can make for dinner? Do you find yourself wishing there were other things you can make? Do you like me go to Costco and buy extra rotisserie chicken just to save for a later date? If the answer is yes to any of the previous questions I’ve got you covered with this recipe for the best ever chicken salad with grapes.

My mom sent it to me many years ago and it’s a hit! Make sure you save it because you can use it after Thanksgiving with leftover turkey too – it’s so good. Nom Nom. Thanks for the recipe mom! xo

chicken & grape salad

CHICKEN SALAD with GRAPES

1/4c mayonnaise
1 tbsp water
1/4 tsp dry mustard
1/2 tsp kosher salt
1 1/2 tsp lemon juice
fresh cracked pepper to taste

1 1/2c cooked, diced chicken (or turkey)
1 1/2c red grapes, halved
1/2c celery, chopped

    • In medium bowl mix mayonnaise, water, mustard, salt, pepper and lemon juice.
    • Whisk until combined & smooth.
    • Add chicken, grapes & celery.
    • Best served cold.
    • Makes 2 servings.
