Nectarine & Avocado Salad

This nectarine avocado salad is something I honestly wasn’t sure about heading into dinner. But consider myself pleasantly surprised. This was the tastiest salad I’ve made in a while. Be sure to make this while stone fruits are still ripe for the season. And to be honest, this is now one of my most favorite summer recipes.

Not only was this easy and quick to make, this was 100% kid approved – family approved as a matter of fact. There weren’t any leftovers. My family of three went back for seconds and totally polished this off. This will be going into my permanent rotation. I can’t wait to make this again. The trick is to make sure you’re using the freshest and sweetest stone fruit you can get your hands on. This is my favorite time of year when stone fruits are ripe – my theory on this is because I’m a summer baby I grew accustom to the flavors when my mom was pregnant with me.

Nectarine & Avocado Salad

3 tbsp lemon juice
2 tsp agave
3 tbsp olive oil
2 tbsp minced sweet onion
2 shakes red pepper flakes
3 nectarines, ripe but still firm, sliced into segments
2 avocados, cut into wedges
½ cup fresh mint, chopped

  • Whisk together lemon juice, agave, olive oil, onion, and pepper flakes
  • Add peaches and stir around
  • Let sit for 15 minutes
  • Just before serving add in avocado & mint, gently stir to combine
