Loaded Cauliflower Bake

Do you ever have moments where you want to come up with additional ways to eat vegetables that the whole family will enjoy? Do you get curious by all the recipes for cauliflower that you find on the internet? I know I sure do. This recipe for loaded cauliflower bake falls into that category. This is a fairly simple recipe that you can make as a hearty side dish for regular dinner or for a holiday meal like Thanksgiving or Christmas.

Loaded Cauliflower Bake

1 head cauliflower, cut into florets, about 1 ¾ lbs.
3 tbsp. dairy-free margarine
¼ cup dairy-free sour cream
½ tsp. kosher salt
¼ tsp. ground black pepper
½ tsp. garlic powder
2 cups dairy-free cheddar cheese shreds
5 slices turkey bacon, cooked, chopped and divided
2 green onions, chopped and divided

  • Pre-heat oven to 350’F
  • Cook cauliflower in boiling water 8-10 minutes until tender
  • Drain well
  • Return cauliflower to pot
  • Add dairy-free margarine, and mash cauliflower to desired texture
  • Stir in dairy-free sour cream, kosher salt, pepper and garlic powder
  • Stir in dairy-free cheese shreds, half of bacon and 1 green onion
  • Spray a casserole dish with non-stick spray
  • Spoon cauliflower mixture into dish
  • Bake 25 minutes or until heated all the way through
  • Remove from oven
  • Sprinkle with green onion & second half of cooked turkey bacon
  • Serve warm
