Why do one thing well, when you can learn to do two. Here’s another recipe for chicken in the instant pot – instant pot chicken take 2. This time instead of using the pressure cooker setting, you’ll be using the slow cooker setting.

Instant Pot Chicken Take 2
1 tsp. granulated garlic
2 tsp. paprika
1 tsp. dry thyme
1 tsp. kosher salt
Fresh black pepper
4-5 pound whole chicken (be sure to remove the bits & pieces from inside)
½ medium onion sliced
- Mix garlic, paprika, thyme, salt and pepper in a small bowl
- Rub spice mix on outside of whole chicken
- Place chicken in the instant pot, top with sliced onion
- Cover and turn to the low slow cooker setting
- Cook 6-8 hours or until inside temperature is 165’F and juices run clear
- Serve
- Shred extra and freeze for another use

- 1/2 medium onion, sliced
Instructions
- Mix garlic, paprika,thyme, salt and pepper in a small bowl
- Rub spice mix on outside of whole chicken
- Place chicken in instant pot, top with sliced onion
- Cover and turn instant pot to slow cooker setting on low
- Cook 6-8 hours or until inside temperature is 165’F and juices run clear
- Serve
- Shred leftover and freeze for later use
