If you have time, you can make your own homemade mango salsa, but as I am a busy working mom, I like to take kitchen shortcuts when I can. For this recipe that meant buying a jar of ready made mango salsa.
Island Style Pork Chops
Pork:
1 jar mild mango salsa
1 cup chopped fresh cherry tomato
4 bone in pork chops
Rub:
1 tbsp. dried thyme
1 tsp. ground allspice
½ tsp. ground coriander
½ tsp. kosher salt
1/8 tsp. paprika
Pinch nutmeg
Pinch ground cloves
- Combine rub ingredients
- Rub into pork chops and set aside
- Heat grill to medium-high
- Cook pork chops 3-4 minutes per side or until cooked through
- Serve warm with mango salsa
