Dairy Free Taco Casserole
I found a recipe similar to this one in one of those mini cookbooks you can find at the grocery store checkout line. So help me I used to have a real problem with those little cookbooks. For a long time, I could not go through the checkout without purchasing one of those books and bringing them home. The drawbacks being 1) typically the recipes are not very healthy, and 2) the little books are quite expensive for what you are getting. I have since learned to curb that habit. Here is my take to make a dairy free taco casserole. The best part for me is this recipe utilized my own homemade taco seasoning.
Dairy Free Taco Casserole
1 package ground turkey
1 cup chicken stock
¼ cup Heather’s homemade taco seasoning, or 1 packet store bought seasoning mix
1 red onion, chopped
1-2 cups frozen white corn
2 cans re-fried beans
2 cups dairy-free cheddar cheese shreds
½ cup diced tomato
½ cup sliced black olives
Extra thick gluten-free corn tortilla chips
Dairy-free sour cream
- Pre-heat oven to 350’F
- Saute ground turkey
- Once cooked, add in onion, and keep cooking until onion is cooked through
- Add taco seasoning and chicken stock
- Stir until mixed
- Add corn and cook a few more minutes until stock is completely absorbed
- Spray a 9×13 glass baking dish with non-stick spray
- Spread re-fried beans on the bottom of the casserole
- Top with ½ of the dairy-free cheese
- Finally top with ground turkey mixture
- Cover with foil, cook 30-40 minutes
- Remove foil, mixture will be bubbly in the casserole
- Top with remaining dairy-free cheese, tomato, and olives
- Tuck gluten-free tortilla chips down the sides, so they stick up from the casserole dish
- Return to the oven and cook for 10 more minutes or until the cheese is melted
- Remove from oven
- Let rest a few minutes
- Serve with a spoon of dairy-free sour cream on top & extra chips on the side
