Gem Cakes
I like to go antiquing. One year I was at my favorite antique mart and discovered this gorgeous cast iron pan with multiple compartments. Turns out it was for making gem cakes as I discovered after I purchased it. Anyone that knows me knows I LOVE doing research, maybe I should have been a research librarian! These fun little gem cakes were made on the American prairie. I was not able to find an actual recipe, so I put one together myself. I hope you enjoy this. Gem Cakes
This makes a double batch
½ cup dairy-free margarine
1 cup gluten-free flour
½ cup sugar
1 tsp. baking soda
1 tsp. baking powder
2 eggs
1 tsp. vanilla extract
6 tbsp. plain unsweetened dairy-free milk
- Pre-heat oven to 350’F
- Warm cast iron pan in oven
- Melt dairy-free margarine, mix in sugar, flour and all other ingredients
- Stir to combine
- When cast iron pan is warm, melt a little bit of dairy-free margarine in each compartment
- Then pour in batter by the tablespoonful
- When all compartments are filled, place pan in oven
- Bake 10 minutes, then check, if not cooked all the way through, cook another 10 minutes
